Freezing food is a convenient and practical way to extend its shelf life and preserve its flavor and properties.

The problem is that it is not a sustainable way to manage what we eat, since it involves a high energy cost and a high emission of polluting gases into the atmosphere.

The drawback is mainly due to the refrigeration devices used to store food.

Now a group of researchers is proposing a new way of freezing food that could reduce energy consumption by as much as 6.5 billion kilowatt-hours a year.

The resulting reduction in carbon emissions, of 4,590 million kg, is equivalent to taking close to one million vehicles off the road.

According to the researchers, these savings could be achieved quickly and inexpensively, “without the need for significant changes to current frozen food manufacturing equipment and infrastructure.”

This method proposed by the scientists is based on a strategy that the same team devised to transport organs for transplant patients.

The technique is called isochoric freezing, and it involves storing food in a rigid, airtight container made of hard plastic or metal, filled with a liquid such as water, and placing it in a freezer.

Unlike the traditional method, this new model does not convert the products into solid ice, but only freezes 10 percent of the volume of the water in the container, and the pressure inside the chamber prevents the ice from continuously expanding.

“The energy savings are due to the fact that you do not have to freeze completely solid foods, which consumes a large amount of energy,” the authors detail.

Professionals are expanding this technology to an industrial level and hope to commercialize it soon.
